Preparation Method
Step 1 Thread the chicken, combined capsicum and onion onto metal or soaked bamboo skewers. Combine the lemon juice, oil and paprika in a large shallow glass or ceramic dish. Add skewers and turn to coat. Season. Cover with plastic wrap. Place in the fridge for 30 mins to develop the flavours. Step 2 Heat a barbecue grill or chargrill on medium-high. Cook skewers, turning, for 15 mins or until vegetables are tender and chicken is cooked through. Step 3 Meanwhile, to make the green salsa, combine the capsicum, onion, parsley, coriander, vinegar and chilli, if using, in a small bowl. Season.
